Black garlic is the result of slow cooking carried out in the presence of a high level of humidity in a specialized oven. Garlic's natural sugars are "carmelized" very slowley.
The texture is similar to a jelly bean and the taste combines flavour: balsamic, caramel, molasses, burnt...Black garlic is not pungent, does not give garlic breath and is easy to digest.
