Simple Harvest Foods mushrooms are proudly grown right here in Regina. While they are not certified organic, everything is grown and processed using clean, natural practices — with no sprays, fillers, or additives. All mushrooms are farm-grown with care to ensure consistency, quality, and traceability from start to finish.

King Trumpet
King trumpet mushrooms (also called king oyster mushrooms) are thick, meaty mushrooms with a mild savory flavor and firm texture. They’re rich in fiber, antioxidants, potassium, and B vitamins, which help support energy and overall health. Because of their dense texture, they’re often used as a meat substitute in stir-fries or grilled dishes. To cook them, slice into rounds or strips and pan-fry with butter, garlic, and soy sauce until golden brown. They’re also great roasted or grilled.

Shiitake Mushroom
Shiitake mushrooms are popular in Asian cooking and have a rich, smoky, umami flavor. They contain compounds that may support immune health and are a good source of copper, selenium, and B vitamins. Shiitakes work well in soups, ramen, stir-fries, pasta, and rice dishes. Remove the tough stems before cooking, then sauté the caps with oil, garlic, and onions, or simmer them in broth for extra flavor.

White Oyster
White oyster mushrooms are delicate mushrooms with soft caps and a mild seafood-like flavor. They grow in clusters and cook very quickly. These mushrooms are low in calories but contain protein, antioxidants, and nutrients that may support heart health. Oyster mushrooms are excellent sautéed, added to soups, or made crispy in the oven or air fryer. Tear them into pieces and cook over high heat until the edges become golden and slightly crispy.

Chestnut Mushroom
Chestnut mushrooms are small brown mushrooms with a nutty flavor and firmer texture than white button mushrooms. They’re packed with fiber, antioxidants, and minerals like selenium and phosphorus. Chestnut mushrooms are very versatile and can be used in pasta, omelets, pizzas, soups, or roasted vegetable dishes. Cook them by slicing and sautéing with olive oil and herbs until browned and tender.

Lions Mane
Lion’s mane mushrooms are fluffy white mushrooms known for their shaggy appearance and seafood-like texture, often compared to crab or lobster. They contain compounds being studied for possible brain and nerve health benefits. Lion’s mane has a mild flavor and absorbs seasoning well. Slice into thick pieces and pan-sear with butter or oil until crispy and golden on both sides. They’re popular in sandwiches, tacos, and “mushroom steak” recipes.
